These yummy chocolatey treats were a hit with 2 out of 3 of my kids! Not bad on a Monday! Whip them up in under 5 mins and enjoy a tasty, guilt free snack.
Ingredients
¾ cup rolled oats
1 ½ cups rice pops (I use the 100% rice ones from the health food aisle)
½ cup cocoa
½ cup desiccated coconut
2 tbsp pea protein (or other protein powder of your choice)
2 tbsp coconut oil (melted)
2 tbsp rice malt syrup or maple syrup
5 fresh dates chopped small
dessicated coconut extra
Directions

Add all dry ingredients to a large bowl & mix until combined

Add dates & wet ingredients

Add a little extra water a TBSP at a time until mix is moist and holds together

Roll into balls any size you like

Roll in desiccated coconut

Refrigerate until firm
