Ingredients

 ½ cup cooking oats
 ½ cup shredded coconut
 1 tsp vanilla paste
 ½ tsp sea salt
 ½ tsp ground cinnamon
 ½ cup dried apricots, chopped
 2 tbsp almond butter
 100 g good quality dark chocolate
 ½ cup raw honey
Start 30 Minute Timer

Directions

Preheat oven to 160°C and line a 20 x 30cm baking tray with baking paper. Mix the first six ingredients in a large bowl.

Place almond butter, chocolate and honey in a heavy-based pot over a low heat. Stir until melted. Pour over the dry mix and work quickly to combine. Press into tray and bake for 30 minutes.

Remove from oven and allow to cool (finishing in the fridge) before cutting into bars.
